It's a fantastic option for a quick and satisfying breakfast on busy mornings!
Ingredients:
- 2 large eggs, beaten
- 1 tbsp milk
- 1/4 cup diced bell peppers
- 1/4 cup diced tomatoes
- 1/4 cup diced red onion
- 1/4 cup shredded cheddar cheese
- 1 large whole-grain tortilla
- Salt and pepper to taste
Instructions:
1 In a bowl, whisk the eggs and milk together. Season with a pinch of salt and pepper.
2 Heat a non-stick pan over medium heat. Drizzle olive oil to the pan.
3 Saute the diced bell peppers, tomatoes, and red onion in the skillet until they are slightly softened. Remove the veggies from the pan and set them aside.
4 Pour the beaten eggs into the same skillet and cook, stirring occasionally, until they are scrambled and cooked through.
5 Lay the whole-grain tortilla on a flat surface. Place the scrambled eggs in the center of the tortilla.
6 Add the sauteed veggies on top of the eggs, followed by the shredded cheddar cheese.
7 Fold the sides of the tortilla inwards and then roll it up tightly, forming a wrap.
Cut the wrap in half and serve immediately. Enjoyyy!!
