If Barbie made pasta, this would be it! This delicious Beetroot Pink Pasta is a perfect combination of healthy, delicious, and fun!
Ingredients;
- 2 beetroots, cooked and peeled
- 60 g cashews
- 150 ml coconut milk
- 100-200 ml pasta water
- 2 cloves garlic
- 1/2 tsp sea salt
- 1/2 lemon, juiced
- Cooked whole grain pasta
- Feta
- Fresh basil
Instructions;
1 In a blender or food processor, combine the cooked and peeled beetroots, cashews, coconut milk, garlic, sea salt, and lemon juice. Blend until smooth. If the sauce is too thick, gradually add pasta water until you reach your desired consistency.
2 Cook the whole grain pasta according to the package instructions. Reserve some of the pasta water before draining. Combine Pasta and Sauce. In a large pan, combine the cooked pasta and the beetroot sauce. Heat over medium heat, stirring until the pasta is evenly coated and the sauce is heated through.
3 Plate the pasta and crumble feta cheese on top. Garnish with fresh herbs like basil or parsley.
