I used to hate lunch because I'd always eat the same thing on repeat for years. In the last few months I've been making more of an effort with my lunch and this toastie is the perfect example of a delicious, quick and easy lunch!😋

I spread vegan pesto on my bread, then layered lots of gooey mozzarella, roasted red pepper, sliced chicken and rocket. Toast until golden brown and crisp. If you want an extra crispy exterior, spread a little bit of mayo on the outside of the bread. 🤤🤤
