1 Ghee and Butter: saturated fats have been in the line of fire. but not all saturated fats are equal. Industrially produced saturated fats like margarine and vanaspati are toxic for our bodies. however, this is not true of natural saturated fats like butter and ghee, coconut oil or palm oil. as a matter of fact, our cell membranes are stronger and more stable with saturated fats and cholesterol, which are important for the functionality of the cell.
ayurvedic detox gives you ghee because it releases toxins from deep within the body and into the gut—for elimination. Grandmas added ghee to our food: on rotis, it reduced their glycaemic index; in times of stress, it gave the gut cells the energy they needed to fight off the release of stress toxins. butter and ghee contain butyrate, a short- chain fatty acid that also provides the main source of fuel for the cells of the gut lining. To fight off toxins and boost immunity, one needs to provide the soldier cells with energy. Take a good look at our culinary and dietary traditions. Ghee is good for you!
2 Cold-Pressed Oils: Indigenous cooking mediums like mustard, sesame and coconut oil are excellent sources of good fats. Mustard oil is anti-inflammatory, a source of plant omega-3 and exceptionally good as a flavour enhancer; sesame oil is rich in antioxidants. olive oil too is loaded with phytonutrients. remember to use the cold-pressed version of these oils (for other health benefits of coconut oil, see Chapter XII).
3 Omega-3 fats: These are anti-inflammatory fats. Incidentally, omega-3 fats are not just present in fish (though fatty fish such as salmon are a good source). Vegetarians can enjoy the same benefit by consuming green leafy vegetables, walnuts, flaxseeds, avocados, methi seeds and chia seeds.
