Ingredients:
• 1 cup short-grain white rice
• 2 cups water
• Pinch of salt
• Toppings of your choice (such as nut butter, avocado, or hummus)
Instructions:
1 Rinse the rice under cold water until the water runs clear to remove excess starch.
2 In a saucepan, combine the rinsed rice, water, and a pinch of salt. Bring it to a boil over medium-high heat.
3 Once boiling, reduce the heat to low, cover the saucepan, and simmer for about 15-20 minutes.
4 Remove the saucepan from the heat and let the cooked rice cool for a few minutes until it’s easy to handle.
5 Preheat the oven to 190°C and line a baking sheet with parchment paper.
6 Take a small handful of the cooked rice and press it firmly together to form a compact rice cake. You can shape it into a round or square shape.
7 Place the shaped rice cake onto the prepared baking sheet. Repeat with the remaining rice, leaving some space between each rice cake.
8 Bake the rice cakes in the preheated oven for about 15-20 minutes.
9 Once baked, remove the rice cakes from the oven and let them cool completely on a wire rack.
10 Once cooled, top the rice cakes with your desired toppings, such as nut butter, avocado, or hummus.
