It is not an odd sight in rural Bengal to see earthen pots tied to Date palm trees. It is tied to collect the Khejur er Rosh, sweet sap of date trees. I’ve been told so many stories of this wintry nectar by my family
it has heightened my interest to try this rare gem. So enriched with natural sugars, it is believed to be worthy of God’s palate.
I’ve heard tales of people clad in the thickest covers, slightly shivering in the foggy morning cold and rubbing palms to keep warm, waiting to drink the sweet sap. It is also incredibly popular in Bangladesh.
But it is only available in the wee hours of morning, because after a few hours as soon as it gets the kiss of harsh sunlight, fermentation sets in turning it into cheap spirit. But nothing can beat a sip of Bengal’s liquid gold – Khejur er Rosh.
