Ingredients:
• 1 boiled beetroot
• 100g paneer
• 1/4th cup milk
• Butter
• Garlic (2-3 cloves, minced)
• Seasonings (e.g., Italian seasoning, chili flakes, oregano, etc.)
• 1 carrot (julienned)
• 1 onion (sliced)
• 1 capsicum (sliced)
• Salt (to taste)
• Semolina-based pasta (200g)
Instructions;
1 Cook the pasta. Drain and set aside.
2 Blend the boiled beetroot until smooth. If needed, add a little water to help it blend.
3 In a large pan, heat a tablespoon of butter over medium heat. Add the minced garlic and sauté until fragrant. Add the sliced onions, carrots, and capsicum. Cook until the vegetables are tender but still slightly crunchy.
4 Crumble the paneer into small pieces. Add the beetroot puree to the pan with the vegetables. Pour in the milk and stir well to combine. Let it simmer for a couple of minutes until the sauce thickens slightly. Add the crumbled paneer and mix well.
5 Add your choice of seasonings (Italian seasoning, chili flakes, oregano, etc.) and salt to taste. Mix everything well and let it cook for another 2-3 minutes. Add the cooked pasta to the pan and toss to coat it evenly with the beetroot-paneer sauce.
6 Serve the Barbie Pasta hot, garnished with a little extra crumbled paneer or a sprinkle of your favorite herbs.
