“Indori Poha” refers to a popular dish from the Indian city of Indore. It typically consists of flattened rice (poha) cooked with various spices, mustard seeds, turmeric, and often garnished with peanuts and chopped coriander.
Ingredients; For the poha;
- 2 cups thick poha
- 1/2 tsp turmeric powder salt
- 2 teaspoons granulated sugar
- Wash your poha in colander, drain and keep aside Once it softens mix these ingredients together and keep aside.
- 2 tbsp vegetable oil
- 1 tsp mustard seeds
- 1tsp cumin seeds
- 1/2 tsp fennel seeds
- 1/2 cup peanuts
- 7-10 curry leaves
- 1 onion, chopped
- 2 green chilies, chopped
- 1 tsp Jeeravan masala
- Coriander
- Lemon juice
- 1/4 cup Pomegranate seeds
- 1/2 cup farsan
Method;
1. Heat oil in a pan over medium heat.
2. Add your peanut and fry till it crackles
3. Add mustard seeds and cumin seeds and fennel to the oil and let them splutter.
4. Add a sprig of Curry leaves.
5. Add chopped onions and sauté until they turn translucent followed by green chilly
6. Finally add Poha and mix together. Add water if your poha is very dry.
7. Cover and cook for 2-3 minutes.
8. Finally our Jeeravan masala.
9. Jeeravan Powder masala (1/2 tsp roasted cumin powder, 1tsp chaat masala, 1/2 tsp black salt, 1/2 tsp Kashmiri red chili powder)
10. Garnish with farak, pomegranate and fresh coriander leaves.
11. Add lemon if required.
Your Indori Poha is ready to serve!
