Let's make Moringa Parathaa!
Ingredients;
- Drumsticks (cleaned and chopped)
- Salt to taste
- Red chili powder
- Black pepper
- Turmeric powder
- Amchoor (dried mango powder)
- Finely chopped green chili
- Coriander leaves
- Finely chopped onion
- Dry coriander powder
- Sesame seeds
- Wheat flour
Steps to follow;
1 Clean and chop the drumsticks into small pieces. Place them in a pressure cooker with enough water to cover them. Cook for 2-3 whistles or until they are soft. Once cooled, remove the pulp from the drumsticks using a spoon. Discard the fibrous part.
2 In a mixing bowl, combine the drumstick pulp. Add salt, red chili powder, black pepper, turmeric powder, amchoor, finely chopped green chili, coriander leaves, finely chopped onion, dry coriander powder, and sesame seeds. Mix well to ensure the spices are evenly distributed.
3 In a separate bowl, take the wheat flour. Add a pinch of salt to the flour and mix. Gradually add water to the flour, kneading to form a smooth and soft dough. Cover the dough with a damp cloth and let it rest for 15-20 minutes.
4 Divide the dough into equal-sized balls. Take one dough ball and roll it out into a small circle on a lightly floured surface. Place a spoonful of the drumstick filling in the center of the rolled-out dough. Gather the edges of the dough and pinch them together to seal the filling inside. Flatten the filled dough ball gently and roll it out into a circle, ensuring the filling doesn't spill out.
5 Heat a tawa or griddle over medium heat. Place the rolled-out paratha on the hot tawa. Cook until bubbles start to appear on the surface, then flip it over. Drizzle a little oil or ghee around the edges and on top of the paratha. Cook until both sides are golden brown and cooked through.
6 Remove the paratha from the tawa and repeat the process with the remaining dough and filling. Serve hot with yogurt, pickle, or any chutney of your choice.
