Poha when prepared and consumed mindfully is easy to digest and is rich in nutrients. It’s nutritional content however may depend on the types of ingredients you use.
Here’s a healthy and easy recipe to prepare it:
Ingredients:
- 1 cup Poha
- 1 small onion, chopped
- 1 small potato, diced
- 1/4 cup green peas
- 1-2 green chilies, chopped
- 1/2 tsp cumin seeds
- 1/4 tsp turmeric powder
- Asafoetida
- 1 tbsp oil
- 1 tbsp peanuts
- Curry leaves
- Salt to taste
- Freshly chopped coriander leaves for garnish
Instructions:
1. Rinse the poha in a colander under running water for a few seconds. Gently fluff it with your fingers and set it aside to soften.
2. In a large pan, heat the oil over medium heat. Add cumin seeds, and asafoetida. Allow the seeds to splutter.
3. Add chopped onions, green chilies, and curry leaves. Saute until onions becomes brown.
4. Add diced potatoes and green peas. Sprinkle a little salt and cook them on medium heat until the potatoes are tender. You can sprinkle a few drops of water to help the potatoes cook faster.
5. Once the potatoes are cooked, add turmeric powder and mix well.
6. Now, add the softened poha to the pan. Mix everything gently, ensuring the poha blends well with the other ingredients.
7. Check and adjust salt if needed. Cook for a few more minutes until the poha is heated through.
8. Add some roasted peanuts and mix well.
9. Garnish with freshly chopped coriander leaves.
Your delicious Poha is now ready to be served!
