Ingredients:
- 1 cup vegan butter (or vegan margarine)
- 2 cups sugar
- 3/4 cup cornstarch
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 2 cups all-purpose flour
- 2 teaspoons vanilla extract
Instructions:
1. Preheat oven to 350 degrees F (175 degrees C). Grease and flour one 9x13 inch baking pan.
2. In a medium bowl, cream vegan butter and sugar until light and fluffy.
3. Add cornstarch, baking powder and salt; mix well. Gradually add in flour, mixing until just blended. [This mixture will be thick.]
4. Pour batter into the prepared pan; spread evenly. Bake for 30 minutes or until a toothpick inserted into the center comes out clean. Cool before frosting or serving as desired.
