Cauliflower rich tomato sauce
And kashmiri haak ( collard greens) with Indian cottage cheese ( paneer) .
Cauliflower tomatoes
Purée tomatoes with a hand blender . Put little oil in a pan, add few slices of onions, the whole masalas ( my fav ones) ginger garlic paste , turmeric , chilli powder and fennel powder . Cook the paste till it gives out oil. Shallow fry cauliflower. Add to paste. Add water , reduce gravy till cauliflowers are cooked .
Haak and paneer .
Cut paneer in small pieces, traditionally the pieces have to be big and thick. Shallow fry keep aside .
Sauté haak and onion slices. Add above masala , u can add a clove and cumin seeds.
Put water into a pressure cooker add haak mixture cook for two few minutes . Add paneer reduce gravy and serve with rice .
Par boil and strain out the water from rice and than cook on low heat. That ways u won’t feel guilty to indulge .
