Tofu is a good source of protein, iron and calcium and is also low in calories. It contains zero cholesterol and is suitable for vegans.
Ingredients:
• 225g tofu, drained
• 2 tbsp soy sauce
• 1 tbsp maple syrup or honey
• 1 tbsp rice vinegar
• 1 tsp sesame oil
• 1/2 tsp garlic powder
• 1/2 tsp ground ginger
• Salt and pepper to taste
• 4 whole-grain wraps
• 1 cup shredded lettuce
• 1/2 cup shredded carrots
• 1/2 cup sliced cucumbers
Instructions:
1. Prepare the tofu: Cut the tofu into thin slices.
2. In a bowl, whisk together soy sauce, maple syrup (or honey), rice vinegar, sesame oil, garlic powder, ginger, salt, and pepper.
3. Add the tofu slices to the marinade, ensuring they are well coated. Let it marinate for at least 15-30 minutes to absorb the flavors.
4. Heat a non-stick pan over medium-high heat.
5. Cook the tofu for about 4-5 minutes on each side, or until browned and slightly crispy.
6. Warm the wraps according to package instructions or preference.
7. Assemble the wraps: Lay a wrap flat and spread a layer of shredded lettuce or leafy greens on top.
8. Add a few slices of cooked tofu and arrange shredded carrots, sliced cucumbers, and any other desired vegetables on top.
9. Roll up the wrap tightly, folding in the sides as you go.
10. Repeat with the remaining wraps and ingredients.
11. Slice each wrap in half and serve immediately.
