If you love coffee but had to give it a miss because it caused acidity, cold brew coffee offers a way to get the caffeine hit without the heartburn. Cold brew is not hot coffee that has been cooled down, it’s a concentrate prepared by steeping ground coffee in room temperature water for over twelve hours, which can be then served hot or cold. The intensity of the brew depends on several factors—the time, amount and temperature of water used and whether the coffee grounds are medium or coarse—but most aficionados say cold brew is smoother in texture. It’s certainly lower in caffeine levels and is less acidic (it has a ph of 6.3 compared to a ph of 5.5 for hot brew).
Alcohol: a controversial subject, but experts tend to agree that moderate drinking (one or two drinks, two or three times a week) can protect us against heart disease and strokes. The kind of alcohol also matters. For instance, red wine contains powerful antioxidants that fight inflammation—but its benefits accrue when you do not consume more than a glass or two.
If you have a leaky gut, alcohol tolerance is significantly reduced and drinking it can injure the gut lining and promote or worsen inflammation. The clear message is that there is no single, ‘safe’ level of drinking. but since alcohol consumption cuts across cultures and is unlikely to disappear from our behaviour, what you can do to get the benefits of moderate drinking is to first heal the gut. and to drink alcohol in measured quantities. binge drinking can never be good for your gut!
